BBQ Ideas
- Always heat your grill for 15 minutes before cleaning with a good wire brush
- Use a spray pump bottle with olive oil to season the grill
- Think outside the box with regards to bbq cooking anything you can bake in an oven you can pretty much do on a bbq
- Grilled angel food cake
- Pizzas
- Grilled seasonal fruit
- Marinades are great but be sure for chicken and fish do not marinade for more that 1 hour as these proteins will start to cook in the marinade
- Parchment baked fish such as halibut, salmon, garlic prawns
- Grilled lemon slices caramelizes and is a great accompaniment for fish or a lemon curd tart
- Purchase a side dish such as a Moroccan Tagine from food for thought catering’s slow food line “food with out thought” ( www.foodforthoughtcatering.net ) to go with your bbq’d leg of lamb, or grilled pork tenderloin
- Corn on the cob separate the husk from the corn not entirely stripping off the husk sprinkle with flavoured salt and good olive oil wrap the husk tightly back around and put on the grill turning every 2-3 minutes
Deanna’s Famous Beef Burgers:
- Lean ground beef (enough to make 8 patties)
- Heaping tbsp Dijon mustard
- 1 Tbsp horseradish
- I farm fresh egg
- ½ cup panko breadcrumbs
- Salt & pepper I like rosemary salt or Himalayan pink salt
- 1 tbsp Balsamic cream
- 1 TBSP Harrissa (spicy Moroccan sauce that's a wonderful marinade you can get from a Mediterranean store)
- 1 TBSP Sambal oelek (Indonesian-style spicy sauce)
- 2 tsp hP sauce
- 2 tsp Honey garlic sauce
Mix all ingredients
Form into patties and grill
Put on fresh baked buns
Top with cambazola cheese, red barn market double smoked bacon, caramelized onions, fresh basil leaves, garlic-lime mayo
